Eggplant with Tomato and Zucchini Frittata

Ingredients:
  • 1 eggplant 2 zucchini
  • Tomato
  • Oil
  • Sale
  • Chives
Heat up the oven and in the meantime, cut into thin slices along for an eggplant and zucchini. Sprinkle with the tomato sauce and salt. Bake for a few minutes until the vegetables are cooked prove. Remove and add a drizzle of extra virgin olive oil before serving raw.
