Cauliflower flan lemon mousse

Ingredients: 200 g

• tops of cauliflower
• 30 g 10 g mushrooms clean
• red onion 2 teaspoons extra virgin olive oil white vinegar
• saffron
• Sale
• Pepe

Slice the onion and put it to soak for 10 minutes in a half cup of white vinegar. Boil the tops of cauliflower in boiling salted water, drain and mash them in the blender. Having put aside the past 50 g, which will be used for the sauce, seasoned with the remaining oil, salt and pepper.

spicchietti Cut the mushrooms, saute in a pan and when they are browned, add the cauliflower and saffron kept aside. Place the center of the plate the mashed cauliflower, drain and cover with dried onions, accompanied with the sauce and serve warm.
